Tonights Dinner Recipe: Easy Chicken Cordon Bleu
Tonight I was dreading dinner, as I do always! I'm not very good in the whole dinner department, and that's why one of my many New Years resolutions is to cook 7 meals a week. Here's my first one this week and looks like I've got some catchin up to do.
Anyway, a couple of days ago I saw a post from a reader at A Thrifty Mom who made an easy chicken dinner and so I went over to AllRecipes.com and found a Chicken Cordon Bleu recipe. The ingredients call for this...
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs
and after looking through the items I had, this is what I came up with...
2 boneless, skinless chicken breasts
- cut in half and pounded down so they were pretty thin (I only had to do this to one of mine)
Thinly sliced leftover ham
3 slices of Swiss Cheese
1 egg
Crushed Ritz Munchable Pretzel Thins (I got these for free while couponing but my family didn't like them, so I'm glad to put these to use)
Placed the ham and cheese on the chicken breast, rolled it up, brushed with egg, and then rolled in Ritz crumbs.
Greased pan, baked at 400 degrees for 30-35 minutes.
All Done! And it was a hit, my husband and my daughter Kylah both approved with smiles. And they are my toughest critics! I added some of my canned homemade applesauce and raw carrotts to make a meal that cost about $0.75/person!
